I don't have a technique for entering formulas, no, and I agree that it's a bit of a pain, because if you try and use CTRL-left to jump back a word to correct a typo you've just spotted, Excel things you want to enter the input at that point, and it's all a mess.
Yeah, you can 'only' nest IF statements seven times, I think, but that's never been an issue for me. Yet.
And if I found myself needing that amount of differentiation, I'd write something in C#, probably...
